Day 17 - Links to some of these recipes.

10:00 a.m. Breakfast - Apple Pecan Breakfast Pilaf (pg. 103)
2:00 p.m. Snack - California Sunshine Salad 
5:30 p.m. Lunch - Green Tea Chicken w/Avocado Corn Salad (pg. 120)
10:00 p.m. Dinner - Fiesta Pasta Salad (pg 126)
11:30 Chocolate Indulgence - Peppercorn Truffle (pg. 148)


Breakfast was DEEE-licious.  For all these "new/strange" things we encounter we tend to be hesitant in the first few bites but once the flavors start coming together, we find ourselves saying "This is SOOOOO good".

Thats exactly what happened with breakfast.  Rice, Apples, Milk and Nuts.. sounds like an odd combination but growing up in latin families we're no strangers to "Arroz Con Leche" (Rice with Milk) and this was fairly reminiscent of it.   Its a decadent comfort food that always makes me think of my mom.  Of course Arroz Con Leche is a thicker consistency but the fact that this was more of a cereal was still great.  The apples gave it all the sweetness it needed.

Would definitely do this again though perhaps warmed up next time.  It surely beats the hell out of oatmeal anyday. *sorry oatmeal*

Sadly I wish I could say the same for our Day 17 Snack.  The title alone indicated I would probably love this combination.  Seriously, California Sunshine... who wouldn't want sunshine in a bowl, right?!

Sadly, the combo of the corn, edamame and avocado just never harmonized with the oranges for me.  The first few bites were odd but I kept on hoping for it to come together and .. it just never happened . Booo....

TheFiance, on the other hand... loved it.    I was secretly jealous that he loved it so much because I had such high hopes for this one.

It's not to say that I hated it,  it was simply "just ok".I think if we choose to have this again in the future, I would probably enjoy the orange separately and toss the grains and produce in a light vinaigrette. Problem solved :0)
